Apple squares an awesome autumn treat

Apple desserts are awesome in the fall, for kids lunchboxes or anytime. Great West Newspapers staffer Judy L'Heureux offers a childhood favourite.

This is something my mom made quite often for dessert. She would also make them for potlucks and church socials and they were always a big hit. I made them a few times and found it very simple; especially making the crust. It was very stretchy and easy to roll out.

APPLE SQUARES

Crust

3 3/4 cups flour

1 1/2 cups butter or margarine

1 tsp salt

2 egg yolks and enough milk to make 3/4 cup

Combine above ingredients and mix well to form a dough

Save egg whites

 

Filling

1 cup crushed corn flakes

10 apples, sliced

1 cup sugar

1 tsp cinnamon

1 cup icing sugar

 

  1. Divide pastry in half. Roll out and place on a cookie sheet.

  2. Sprinkle crushed corn flakes over the pastry.

  3. Mix sliced apples, cinnamon and sugar together and arrange over the pastry on top of the corn flakes.

  4. Roll out remaining dough and place over the apple mixture.

  5. Beat egg white and brush over the top.

  6. Bake for 45 minutes at 350 degrees.

  7. Optional--mix icing sugar with water and drizzle over the warm squares.
