Roast Chicken

Willy Grant Great West Newspapers' director of digital, is a foodie who loves to cook and share her creations with others. Here's her recipe for a delicious roast chicken.

Roast Chicken

Ingredients

  • One bird
  • Zest and juice of one lemon
  • 1 tsp Fresh rosemary
  • 1 tsp Fresh thyme
  • Salt & pepper
  • 1 Tbsp olive oil
  • One onion, quartered
  • 4 cloves garlic, peeled
  • One celery stalks cut into one inch pieces
  • One carrot, peeled and cut into one inch pieces
  • Baby potatoes, one cup

Method

Rub bird with olive oil, lemon zest, fresh rosemary, salt & pepper.  Toss everything into cast iron pan, place chicken on top, pop into oven for approximately 1 hour and 30 minutes at 400 degrees.  Roast until juices from chicken run clear.  Baste occasionally with pan juices.
