Rodkal: Danish red cabbage

For many, sides are the favourite part of the holiday meal. Try this one on for size.

Rodkal is Danish for red cabbage.  Traditionally served with roast duck or roast pork, Rodkal can be enjoyed throughout the year, but it is often served at Christmas as a side dish.

 

1 lb of thinly sliced red cabbage

1 small red onion, thinly sliced into half moons

2 apples, cored, peeled and chopped

1 T of butter or duck fat

4 T of apple cider vinegar

2 cups of cranberry, red currant or apple juice

2 T of sugar

1 t of salt

 

Saute cabbage, onions and apples in butter or duck fat for a 3 to 5 minutes.

Add vinegar, juice and sugar.  Season with salt.

Simmer, stirring occasionally for 45 minutes.
